Today I’m going to show you how to make smoked deviled eggs. These things are always a huge hit at parties, family get-togethers and anytime you want to relax at the weekends.
The first thing you want to do is get the charcoal briquettes going. I do this on an old-fashioned traditional smoker. It makes it a lot more time-consuming and it takes a lot more effort. But I love it, so it’s no problem for me. If you have an electric smoker it will also work perfectly well.
If you are using a chimney to get your charcoal briquettes then you will make the job pretty easy. Rather than using lighter fluid which nobody likes to taste. You should use the briquettes and light the natural way. You should only use a little bit of charcoal. The reason you don’t need to use a whole lot is that you don’t really need high heat and you are not going to be smoking for very long.
Time to Start the Smoked Deviled Eggs
With the charcoal getting hot it is time to start the eggs. Stick the eggs in a pot and boil them up. Whilst this is happening you can chop up some wood chips. I like to use hickory as it gives a great taste. If you soak your wood chips then up to you. Personally I don’t.
When the eggs are done, get the briquettes in the grill. Bring the smoker up to temperature, set the wood chips on the coals and its time to go. You are looking to get the smoker up to almost 250 degrees.
Once the eggs are boiled put them into some ice water and then you have to peel them. Put the eggs on a tray and put them in the smoker. They are going to sit in the smoker for between twenty and thirty minutes.
The temperatures not that critical because there have already been boiled. Really you just need to have a nice thick smoke on it for about 30 minutes. Take the eggs off and put them in a bowl. When they cool enough put them in the fridge to chill. You can chill them overnight if you are not going to eat them the same day.
Chill and Prepare the Eggs
If you left the eggs overnight in the fridge they will have a nice yellow smoky color to them. You will notice that the smokiness flavor would have mellowed out a bit as well.
Take the eggs and you are going to cut them open and then you are going to make the filling. Scoop out the middle of the eggs and smash them up with the back of a fork. Do this in a fairly large bowl as you are going to add the other ingredients. The first ingredient you are going to add is 2/3 cup skeer yogurt. The next ingredient is one and a half teaspoons of apple cider vinegar, followed by one and a half teaspoons of organic yellow mustard. 1/4 teaspoon salt and 1/4 teaspoon of pepper. You will probably add about a teaspoon of dill. Blend it all together into a paste.
With the filling all done you can spoon it into each egg. You can pipe it in if you want by either using a piping bag or cut the tip off a ziplock bag. Whatever works for you.
Obviously you’d like to use a garnish that compliments the eggs. You will have some dill leftover. Sprinkle the dill on top and you are finished.
