Getting out the griddle and cooking up a grilled cheese sandwich is one of my favorite go to snacks when its late night and I feel hungry. Add in some brisket to the mix and you end up with one amazing sandwich that packs a punch, and is full of flavor. Today we are going to be looking at how to make the best brisket grilled cheese sandwich.
If you own something like a Blackstone you can easily do this out in the yard, or some people have a griddle attachment they can put on their BBQ. If you have neither of these then a saucepan or your cast iron is going to get the job done just as well.

What if I have no Leftover Brisket?
No leftover brisket? No problem! We get it it, sometimes you just don’t have any as you ate it all. If this is the case then replace the brisket with some steak. For the steak to work well in the sandwich you are going to need one that is tender. Something like a sirloin is perfect but they can work out really expensive. So other choices such as tenderloin or flank steak offer a much cheaper alternative and work really well.
Let us get stuck into making this simple brisket grilled cheese sandwich. These ingredients are enough to make four sandwiches. So, up or down the ingredients to match how many you are making. Like anything, feel free to experiment and add more or less of the things you like and don’t like.

- 8 slices of bread – I like to use Italian but pick your favorite
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 2-3 slices leftover brisket, shredded
- 1/2 stick of butter
- 1 cup BBQ Sauce
Lay your slices of bread out on a chopping board and butter each slice of bread on one side. You are looking to get about half a tablespoon on each slice but just a fairly thick covering will be just about right.
Turn your griddle on or get your saucepan heated to a medium heat. Once you are up to temperature then you should take some of the butter you have left and swirl it around the flat top or pan until the cooking area you are using is covered.
Take your bread and place the buttered side down onto the hot surface. Take your brisket and cover the unbuttered side. Be generous with the brisket. Firstly because it’s brisket and secondly because, ummm…well it’s brisket!
With the brisket on the bread add a layer of shredded cheddar and then a layer of Monterey Jack cheese on top of that.
On top of this add some BBQ sauce. It is completely up to you which BBQ sauce you use. Some of our favorite BBQ sauces are available here. If you don’t like BBQ sauce then don’t add it. You could maybe use a little of your favorite hot sauce or just add a bit of salt and pepper to season. Just do you at the end of the day.
Finally add the second slice of bread on top. Make sure you have the butter side facing up. Cook until the bottom side is golden brown. Flip the whole sandwich over and repeat. Once both sides are golden brown and you can feel that cheese is all melted and gooey you are done!
