Grilled BBQ Garlic Parmesan Wings!

These garlic parmesan wings are an excellent side dish that are sure to light up any BBQ event. They are really simple to make and if your larder is fairly well stocked you should have most of the ingredients for the sauce.

These grilled wings are everything you can imagine, and the flavor profile works so well. Everything just melds together to deliver a tremendous bite. You get a delicious smoky flavor, beautiful and flavorful grill marks and little pieces of char on the chicken that give off tons of flavor. Even better is that you are not frying so you don’t end up with an oily mess to clean up when you are finished.

We are going to be quick brining the wings so that they crisp up really nice on the outside, but have a really juicy and tender interior.

Grilled BBQ Parmesan Wings Ingredients

  • 3-4 Pounds Chicken Wings. Separate the flats from the drumettes and remove the tips.
  • 8 Cups of Water
  • 1/3 Cup Kosher Salt
  • 1 Tablespoon Sugar

Garlic Parmesan Sauce:

  • 1 Head of roasted garlic
  • 1/2 Cup mayonnaise
  • 1 tsp sugar
  • 2 Tbsp grated Parmesan cheese
  • 1 Tbsp apple cider vinegar
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp black pepper
  • 1 red Fresno chile pepper, minced

Method

Start by getting a large mixing bowl and filling it with water. It doesn’t need to be exact but somewhere around eight cups of water should be about right for this many wings. Add the kosher salt and the sugar to the water and mix until they have dissolved. Once this is done put in the chicken wings and place in the fridge for about thirty minutes.

During this time you can get outside and get your grill lit. Bring it up to about 300 degrees. You are going to be grilling the wings instead of smoking them. We will be grilling directly over the coals or over the flames if you are using a gas BBQ. As a side note if you want to smoke the wings instead go for it.

Once the thirty minutes have passed take the bowl of chicken wings out of the fridge. Pat them really dry with kitchen towels. It is really important that they are as dry as you can get them. Once this is complete you can then season as you want or cover them with your favorite rub. I like to use Holy Gospel rub by Meat Church and highly recommend it.

Time to Cook the Grilled BBQ Parmesan Wings.

Once the grill is up to temperature it is time to get the wings on the grill. If you are cooking indirectly they will take maybe thirty to forty five minutes to reach an internal temperature of 165 degrees which is what you need for chicken. Give them a flip after about twenty minutes so that each side gets an even cook.

Whilst the wings are cooking it is time to make the garlic parmesan sauce. It is incredibly easy to make the sauce. All you need to do it take all of the ingredients in the list above and combine them together in a mixing bowl.

Once the chicken is finished take it off the grill and mix the wings into the sauce and give everything a really good mix. These are now ready to serve and I always like to serve them up with a delightful buffalo sauce.

The dry brining part of the recipe can be completed one day in advance if you think you will be busy with other things on the day of the cook.

If you are getting a lot of flare ups or excess smoke when you are grilling then move the chicken away for a bit of time. Flare ups are really easy to have with chicken as bits of fat drip onto the coals.
