These are very quick sides to make. The preparation should only take between five and ten minutes. The grilling time should come in around twelve to fifteen minutes depending on the size of the corn.
Grilling the chimichurri grilled corn on the cob
We all have different grills at home so let’s take a look at the different ways we can get the corn cobs grilled.
If you have a gas grill then you should be grilling the corn over direct heat. The heat should be medium, at about 400° to 450°F. Do this on a clean, oiled grate.
If you have a charcoal BBQ then you will want to grill the corn over direct heat. Make a charcoal bed and wait until the coal is fully up to heat. As with the gas grill, you should grill over an oiled grate with the grill at the lowest position it goes
If you want to cook directly over wood. Then you should make a bed of wood about three to four inches deep. Set the fire, oil the grate, and place it about two inches above the flames.

Ingredients (Makes 6 Servings)
Oil for coating the grill grate
6 ears of corn with the husks left on.
1 tablespoon olive oil
2 tablespoons fresh lime juice
¼ cup Green Chimichurri Rub.
Method for Chimichurri Grilled Corn On The Cob
Firstly you will need to bring your grill up to temperature. Do this as per the directions above.
Brush the grill grates with oil and place the corn onto the grill. If your BBQ has a lid put it down. Cook the husks until they are charred. You should be able to hear a quiet sputtering sound coming from within the husks. Turn the corn every three or four minutes. The entire process should take between twelve and fifteen minutes.
Whilst the corn is grilling you can prepare the chimichurri. Do this by combining the olive oil, lime juice, and chimichurri rub in a bowl.
Once the corn is ready, take it off the grill. Leave the corn to cool down for a few minutes and then start to peel off the husks. Serve the corn covered with the chimichurri and enjoy.
