When it comes to side dishes I think that onion rings are right up there. But, add a wrapping of bacon around them and they are hard to beat! Each of these little rings is full to the brim with goodness and will leave you wishing you had made more. Bacon Wrapped Onion Rings are a do not miss!

If there is one thing I hate about making onion rings its all the hot oil. It’s messy, it’s a waste of oil and I have lost count of the number of times I have burnt myself on the spitting oil. Luckily these ones are cooked in the smoker so there is none of that to worry about.

This is probably the simplest recipe we have on the entire site but its probably also one of the tastiest. You only need three simple ingredients to make these. Onions. Try and get reasonable sized ones. You don’t want your rings too small as you have to wrap the bacon around them. The second ingredient is Bacon. With just three ingredients they are super easy, and also cheap to make.

How to Make Bacon Wrapped Onion Rings

Lets get started on the onion rings as that is what you are here for.

Firstly you will need to cut your onions into thick slices. At least half an inch per slice is what i would recommend. Also, to try and keep two layers of onion together. This will allow for a much stronger ring that is less likely to fall apart at any point in the process.

With the onion cut it is time to wrap the bacon. You want to cover every part of the onion so that no part can be seen. Tuck in the ends of the bacon and if it wont stay in place then use toothpicks to secure it.

With the rings covered it is time to season them. Apply rub on all sides and use as liberally as you feel is necessary. For myself I like to go with a medium coverage as I really want to still get a good bite of onion coming through when I dig into them.

The rings can can rest on the side whilst you bring your smoker up to temperature. Preheat it until it is sitting at 275 degrees Fahrenheit. Take your onion rings and place them directly onto the grates of the grill. I would say cook them for at least an hour and up to an hour and a half. The amount of cooking required will depend on how much crisp you like on your bacon. When they are fully cooked and the way you like them get them off the smoker.

With the bacon wrapped onion rings cooked just give them some time to cool down before eating. You can use them as a side with a great dip, put them in a burger or anything else you feel like.

Tips for Making These EVEN Better!

If you want these onion rings to be even better there is a few things you should focus on. Following these will really up your game to another level.

We all like our bacon cooked to different levels. If you want it to stay quite soft start checking it from about the hour mark so that it is not too crispy for you. However, if you want all of the fat to be rendered and have a crisp then you are probably going to need to go the full ninety minutes. If you want to go extra, extra crispy then turn up the heat to around four hundred degrees for the last few minutes. This will really add a crisp to them.

Take your time over the wrapping of the rings. You want it to be tight and fixed in place so that it doesn’t come undone whilst its cooking. If you decide to use toothpicks just make sure to take them out once cooked.
